Ingredients
  

  • 1 pound Italian sausage Remove casings if using links
  • 8 ounces penne pasta Cooked al dente
  • 1 tablespoon olive oil
  • 1 medium onion Finely chopped
  • 2 cloves garlic Minced
  • 1 can (28 ounces) crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes Optional, for heat
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Method
 

  1. Preheat your oven to 375°F (190°C). In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it into small pieces with a wooden spoon, and cook until browned, about 8-10 minutes.
  2. Add the onion and garlic to the skillet, cooking until the onion is translucent, about 5 minutes. Stir in the crushed tomatoes, oregano, basil, and red pepper flakes. Simmer for 10 minutes, allowing the flavors to meld. Season with salt and pepper to taste.
  3. In a large bowl, combine the cooked penne pasta with the sausage and tomato sauce, mixing well. Transfer the mixture to a greased 9x13-inch baking dish. Sprinkle the mozzarella cheese and Parmesan cheese evenly over the top.
  4. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly. Let the casserole rest for 5 minutes before serving. Garnish with fresh basil.
