Ingredients
  

  • 1 flatbread pre-made or homemade
  • 2 tbsp olive oil
  • 8 oz mushrooms sliced
  • 1 clove garlic minced
  • 1 cup mozzarella cheese shredded
  • 1/4 cup parmesan cheese grated
  • 1 tsp fresh thyme chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  1. Preheat your oven to 425°F (220°C). Place the flatbread on a baking sheet lined with parchment paper.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced mushrooms and cook for 5-7 minutes until they release their moisture and start to brown. Add the minced garlic, salt, and pepper, and cook for another minute.
  3. Brush the remaining olive oil over the flatbread. Sprinkle the mozzarella cheese evenly over the flatbread, followed by the cooked mushrooms and garlic. Top with the grated parmesan cheese and fresh thyme.
  4. Bake in the preheated oven for 12-15 minutes, or until the cheese is melted and bubbly, and the edges of the flatbread are golden brown.
  5. Remove from the oven and let cool for a few minutes. Sprinkle with fresh parsley before slicing and serving.
