- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave for 1 minute, stirring halfway through, until fully melted and combined.
- In a separate bowl, whisk together the almond flour, baking powder, and erythritol. Add the melted cheese mixture, eggs, and vanilla extract to the dry ingredients. Mix until a dough forms. You might need to use your hands to knead it into a cohesive ball.
- Place the dough between two sheets of parchment paper and roll it out into a rectangle about 1/4-inch thick. Brush the melted butter over the dough, then sprinkle evenly with cinnamon and granulated erythritol.
- Carefully roll the dough into a log, starting from one of the longer sides. Use a sharp knife to cut the log into 8 equal pieces. Place the rolls onto the prepared baking sheet, leaving space between them.
- Bake for 20-25 minutes, or until the rolls are golden brown. While the rolls are baking, prepare the glaze by mixing the powdered erythritol and heavy cream until smooth. Drizzle the glaze over the warm rolls before serving.
