- In a non-stick skillet over medium heat, melt the butter. Add the sliced mushrooms and sauté for about 3-4 minutes until they release their moisture and start to brown.
- Add the chopped spinach to the skillet and cook for another 1-2 minutes until wilted. Season with salt and pepper to taste, then remove the vegetables from the skillet and set aside.
- In a bowl, whisk together the eggs and heavy cream until well combined. Season with a pinch of salt and pepper.
- Pour the egg mixture into the skillet, ensuring it covers the bottom evenly. Cook over medium heat for 2-3 minutes until the edges start to set.
- Sprinkle the shredded cheese evenly over the omelette, then add the cooked mushrooms and spinach to one side of the omelette.
- Using a spatula, carefully fold the other half of the omelette over the filling. Cook for another 1-2 minutes until the cheese melts and the eggs are fully set.
- Slide the omelette onto a plate, garnish with fresh herbs if desired, and serve immediately.
