- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. In a large bowl, whisk together the almond flour, granulated erythritol, baking powder, and salt. Using a pastry cutter or your fingertips, work the cold, cubed butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining. This creates flaky layers.
- In a small bowl, whisk together the cold eggs and vanilla extract. Make a well in the center of the dry ingredients and pour in the egg mixture. - To assemble, carefully split each biscuit wedge in half horizontally using a serrated knife. Place the bottom half on a plate. Spoon a generous amount of the macerated strawberries and their juices over it. Top with a large dollop of whipped cream. Place the top half of the biscuit gently on the cream. Add another small spoonful of strawberries and a final flourish of whipped cream. Serve immediately and enjoy!
