Leftover Turkey Noodle Casserole

Ingredients
  

  • 2 cups cooked turkey shredded or chopped
  • 8 oz egg noodles cooked al dente
  • 1 can cream of mushroom soup 10.5 oz
  • 1 cup milk
  • 1 cup frozen peas thawed
  • 1 cup shredded cheddar cheese divided
  • 1/2 cup breadcrumbs optional for topping
  • 2 tbsp butter melted, for breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder

Equipment

  • 9x13 inch baking dish
  • Large mixing bowl
  • Oven

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. In a large bowl, mix together the cream of mushroom soup, milk, garlic powder, and onion powder until smooth. Season with salt and pepper to taste.
  3. Add the cooked turkey, egg noodles, and frozen peas to the soup mixture. Stir well to combine.
  4. Pour half of the mixture into the prepared baking dish. Sprinkle with half of the shredded cheddar cheese. Add the remaining mixture on top and finish with the rest of the cheese.
  5. If using, mix the breadcrumbs with the melted butter and sprinkle over the top of the casserole.
  6. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
  7. Let the casserole cool for 5 minutes before serving to allow it to set.

Notes

Chef's Tips:
• For a creamier texture, use whole milk or even half-and-half
• Avoid overcooking the noodles before adding them to the casserole to prevent them from becoming mushy
• Serve with a side salad or steamed vegetables for a complete meal
