  • 1 lb ground beef 80/20 blend for best results
  • 1/2 lb ground pork Adds moisture and flavor
  • 1 cup breadcrumbs Fresh or panko preferred
  • 1/2 cup milk Whole milk for richer meatballs
  • 2 eggs Beaten
  • 1/2 cup grated Parmesan cheese Freshly grated for best flavor
  • 1/4 cup finely chopped parsley
  • 2 cloves garlic Minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup olive oil For frying

Method
 

  1. Preheat your oven to 375°F (190°C). In a large bowl, combine the ground beef and ground pork. Mix gently to avoid overworking the meat.
  2. In a separate bowl, soak the breadcrumbs in milk for about 5 minutes until they absorb the liquid. Add this mixture to the meat.
  3. Add the eggs, Parmesan cheese, parsley, garlic, oregano, salt, and black pepper to the meat mixture. Mix until just combined.
  4. Form the mixture into 1.5-inch meatballs. Heat the olive oil in a large skillet over medium heat. Brown the meatballs on all sides, about 2-3 minutes per side.
  5. Transfer the browned meatballs to a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
