Ingredients
  

  • 2 salmon fillets about 6 oz each, skin on or off
  • 1 tbsp olive oil
  • 1 lemon lemon half for juice, half for slices
  • 1 tsp dill fresh or dried
  • 0.5 tsp salt
  • 0.25 tsp black pepper

  • Microwave-safe lid or plastic wrap
  • Paper towels
  • Pastry brush

Method
 

  1. Pat the salmon fillets dry with paper towels. Brush both sides with olive oil and season with salt and black pepper.
  2. Place the salmon fillets in a microwave-safe dish. Squeeze juice from half a lemon over the fillets and sprinkle with dill.
  3. Cover the dish with a microwave-safe lid or plastic wrap, leaving a small vent for steam to escape. Microwave on high for 3-4 minutes, checking for doneness at 3 minutes.
  4. Let the salmon rest for 1-2 minutes before serving. Garnish with lemon slices and additional dill if desired.
