Ingredients
  

  • 2 tbsp Olive oil
  • 1 lb Mushrooms sliced
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 10 oz Spinach fresh, chopped
  • 1 tsp Thyme dried
  • Salt and pepper to taste
  • 8 sheets Phyllo dough thawed
  • 1/2 cup Butter melted
  • 1/2 cup Parmesan cheese grated

Method
 

  1. Preheat your oven to 375°F (190°C). In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and cook until they release their moisture and start to brown, about 8-10 minutes.
  2. Add the chopped onion and minced garlic to the skillet with the mushrooms. Sauté until the onion is translucent and the garlic is fragrant, about 5 minutes. Stir in the chopped spinach and cook until wilted, about 3-4 minutes. Season with thyme, salt, and pepper. Remove from heat and let the mixture cool slightly.
