Ingredients
  

  • 8 oz mushrooms sliced, such as cremini or button
  • 2 tbsp olive oil divided
  • 2 cloves garlic minced
  • 1 tbsp balsamic vinegar
  • 1 tbsp fresh thyme chopped
  • 1/4 cup Parmesan cheese grated
  • 1 baguette baguette sliced
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking sheet, brush with 1 tablespoon of olive oil, and bake for about 7-10 minutes until lightly toasted.
  2. While the bread is toasting, heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Add the mushrooms and cook for 5-7 minutes until they release their moisture and start to brown.
