Ingredients
  

  • 1 pound gnocchi fresh or store-bought
  • 8 ounces mushrooms sliced, such as cremini or shiitake
  • 2 tablespoons butter unsalted
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese grated, plus more for serving
  • 1 tablespoon olive oil
  • 1/4 cup fresh parsley chopped, for garnish
  • Salt and pepper to taste

Method
 

  1. In a large skillet, heat the olive oil over medium heat. Add the mushrooms and cook until they release their moisture and start to brown, about 5-7 minutes. Season with salt and pepper.
  2. Add the butter to the skillet and let it melt. Stir in the minced garlic and cook for another minute until fragrant.
  3. Pour in the heavy cream and bring to a simmer. Reduce the heat to low and let it cook for 2-3 minutes to thicken slightly.
  4. Stir in the grated Parmesan cheese until melted and well combined. Adjust seasoning with salt and pepper if needed.
  5. Meanwhile, cook the gnocchi according to package instructions until they float to the surface, about 2-3 minutes. Drain and add the cooked gnocchi to the skillet with the sauce.
  6. Toss the gnocchi in the sauce to coat evenly. Cook for an additional 1-2 minutes to let the flavors meld.
  7. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
