Ingredients
  

  • 1 cup Arborio rice Do not rinse
  • 4 cups chicken or vegetable broth Warmed
  • 1 cup white wine Dry, such as Pinot Grigio
  • 2 tbsp olive oil
  • 1 onion Finely chopped
  • 2 cloves garlic Minced
  • 8 oz mushrooms Sliced, such as cremini or shiitake
  • 1/2 cup Parmesan cheese Freshly grated
  • 2 tbsp butter Unsalted

Method
 

  1. Heat the olive oil in a large saucepan over medium heat. Add the onion and cook until translucent, about 5 minutes.
  2. Add the garlic and cook for another minute until fragrant. Stir in the mushrooms and cook until they release their moisture and start to brown, about 5-7 minutes.
  3. Add the Arborio rice and stir to coat with the oil and mushroom mixture. Cook for 2 minutes, allowing the rice to toast slightly.
  4. Pour in the white wine and stir until it's mostly absorbed by the rice, about 2 minutes.
  5. Begin adding the warmed broth, one ladle at a time, stirring constantly. Wait until each addition is mostly absorbed before adding the next. This process should take about 20-25 minutes.
  6. Once the rice is creamy and cooked to al dente, remove from heat. Stir in the butter and Parmesan cheese until melted and well combined. Season with salt and pepper to taste.
  7. Serve immediately, garnished with fresh parsley.
