Ingredients
  

  • 2 tbsp Olive oil
  • 1 lb Mixed mushrooms sliced (such as cremini, button, and shiitake)
  • 1 large Onion finely chopped
  • 2 cloves Garlic minced
  • 1 tbsp Paprika
  • 1 cup Vegetable broth
  • 1 cup Sour cream or Greek yogurt for a lighter option
  • 2 tbsp All-purpose flour
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste
  • 8 oz Egg noodles cooked according to package instructions
  • Fresh parsley for garnish

Method
 

  1. Heat the olive oil in a large skillet over medium-high heat. Add the sliced mushrooms and cook for 5-7 minutes until they release their moisture and start to brown.
  2. Add the chopped onion to the skillet and sauté for another 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Sprinkle the paprika over the mushroom mixture and stir to coat evenly. Cook for 1 minute to release the flavors.
  4. In a small bowl, whisk together the vegetable broth, sour cream, flour, and Dijon mustard until smooth. Pour this mixture into the skillet, stirring constantly to avoid lumps.
  5. Reduce the heat to low and simmer the stroganoff for 10-12 minutes, stirring occasionally, until the sauce thickens. Season with salt and pepper to taste.
  6. Serve the Mushroom Stroganoff over cooked egg noodles, garnished with fresh parsley.
