Ingredients

  • 1 bone-in prime rib roast about 6-8 pounds
  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary finely chopped
  • 2 tablespoons fresh thyme finely chopped
  • 1 tablespoon kosher salt
  • 1 tablespoon black pepper freshly ground
  • 2 tablespoons olive oil

Equipment

  • Roasting pan
  • Meat thermometer
  • Sharp carving knife

Method

  1. Preheat your oven to 450°F (230°C). Trust me, this high initial heat is crucial for achieving that perfect sear on your prime rib.
  2. In a small bowl, mix together the minced garlic, chopped rosemary, thyme, salt, pepper, and olive oil to create the garlic herb rub. Believe me, this aromatic blend will elevate your roast to the next level.
  3. Pat the prime rib dry with paper towels, then generously coat it with the garlic herb rub, ensuring an even distribution. Tip from me: let the roast sit at room temperature for about an hour before cooking to ensure even cooking.
  4. Place the roast bone-side down in a roasting pan. Now comes the fun part—roast it at 450°F (230°C) for 15 minutes to get that beautiful crust.
  5. Reduce the oven temperature to 325°F (160°C) and continue roasting for about 15-20 minutes per pound, or until the internal temperature reaches your desired doneness. For medium-rare, aim for 135°F (57°C).
  6. Remove the roast from the oven, tent it with foil, and let it rest for at least 20 minutes before carving. Step back and admire your masterpiece before serving!

Notes

Chef's Tips:
• For best results, use a bone-in roast as it adds flavor and helps with even cooking
• Avoid over-salting the rub; the salt will intensify during cooking
• Serve with horseradish sauce or au jus for an authentic experience
Food Safety:
• Ensure the internal temperature reaches at least 135°F (57°C) for medium-rare to kill harmful bacteria
• Store leftovers in an airtight container in the refrigerator for up to 3 days
