  • 1 tsp pure vanilla extract
  • 1 tsp pumpkin pie spice
  • 1/4 tsp ground cinnamon

Method
 

  1. Preheat your oven to 350°F (175°C). Line a 9x13 inch metal baking pan with parchment paper, leaving an overhang on the long sides for easy removal. Lightly grease any exposed pan. This setup is crucial for clean slices later.
  2. Make the brownie batter. In a large bowl, whisk together the melted butter and 2 cups of sugar until combined. Add the 4 eggs and 1 tablespoon of vanilla, whisking vigorously for about 1 minute until the mixture is smooth and slightly thickened. Trust me, this initial whisking incorporates air for a better texture.
  3. Sift the flour, cocoa powder, and salt directly into the wet ingredients. Using a rubber spatula, fold gently until just combined and no dry streaks remain. The batter will be thick and glossy. Set this aside while you prepare the cheesecake swirl.
  4. Make the pumpkin cheesecake layer. In a medium bowl using a hand mixer or stand mixer fitted with the paddle, beat the softened cream cheese on medium speed until completely smooth, about 1 minute. Add the pumpkin puree, 1/3 cup sugar, 1 egg, 1 teaspoon vanilla, pumpkin pie spice, and cinnamon. Beat on medium-low until fully combined and creamy, scraping down the bowl as needed.
  5. Assemble the brownies. Pour about 3/4 of the brownie batter into your prepared pan, spreading it into an even layer. Dollop all of the pumpkin cheesecake mixture over the top. Spoon the remaining brownie batter in small dollops over the cheesecake layer. Now for the fun part: use a thin knife or a skewer to gently swirl the two batters together in a figure-eight pattern. Don't over-swirl—you want distinct ribbons of each.
  6. Bake for 40-45 minutes, or until the edges are set and the center shows just a slight jiggle when you gently shake the pan. A toothpick inserted into a brownie-dominant section should come out with moist crumbs, not wet batter. Let the pan cool completely on a wire rack, then refrigerate for at least 3 hours (or overnight) for the cleanest slices.
