- Heat the olive oil in a large skillet over medium heat. Add the sliced mushrooms and cook for about 5 minutes until they start to brown and release their moisture.
- Add the minced garlic to the skillet and cook for another minute until fragrant, stirring frequently to prevent burning.
- Stir in the uncooked orzo pasta and toast it lightly for about 2 minutes, stirring constantly to prevent sticking.
- Pour in the chicken or vegetable broth and bring the mixture to a simmer. Reduce the heat to low, cover, and cook for about 8-10 minutes, or until the orzo is tender and has absorbed most of the liquid.
- Once the orzo is cooked, stir in the heavy cream, grated Parmesan cheese, and fresh thyme. Season with salt and pepper to taste. Cook for an additional 2-3 minutes, stirring occasionally, until the sauce thickens slightly.
- Remove from heat and let the orzo rest for a couple of minutes before serving. Garnish with fresh parsley if desired.
