Ingredients
  

  • 4 salmon fillets 6 oz each, skin on
  • 1 cup pistachios unsalted, shelled
  • 2 tbsp butter melted
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tsp lemon zest
  • 1 tsp fresh thyme chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a food processor, pulse the pistachios until finely chopped but not turned into a paste. Transfer to a shallow dish.
  3. In a small bowl, mix together the melted butter, Dijon mustard, honey, lemon zest, and thyme. Season the salmon fillets with salt and pepper.
  4. Brush the top of each salmon fillet with the butter mixture, then press the fillets into the chopped pistachios, coating the top evenly.
  5. Place the salmon on the prepared baking sheet, pistachio side up. Bake for 18-20 minutes, or until the salmon flakes easily with a fork and the internal temperature reaches 145°F (63°C).
