Ingredients
  

  • 2 bagels preferably whole grain or your favorite type
  • 4 oz smoked salmon
  • 2 large eggs
  • 2 tbsp cream cheese softened
  • 1 lemon for zest and juice
  • 1 tbsp fresh dill chopped
  • to taste salt and pepper
  • optional capers for garnish

Method
 

  1. Preheat your oven to 350°F (175°C). Slice the bagels in half and place them cut-side up on a baking sheet. Toast in the oven for about 5 minutes until lightly golden.
  2. While the bagels are toasting, bring a small pot of water to a boil. Gently lower the eggs into the boiling water and cook for 4-5 minutes for a soft-boiled egg, or longer if you prefer a firmer yolk. Once cooked, transfer the eggs to an ice bath to stop the cooking process.
  3. Spread the softened cream cheese evenly over the toasted bagel halves. Layer the smoked salmon on top of the cream cheese.
  4. Carefully peel the eggs and slice them in half. Place the egg halves on top of the salmon.
  5. Sprinkle the bagels with fresh dill, lemon zest, and a squeeze of lemon juice. Season with salt and pepper to taste. Add capers if using.
  6. Serve immediately and enjoy your delicious Salmon Bagel with Egg.
