Ingredients
  

  • 1 pound canned salmon drained and flaked
  • 1/2 cup breadcrumbs plus extra for coating
  • 1/4 cup finely chopped onion
  • 1 large egg beaten
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil for frying

Method
 

  1. In a large bowl, combine the flaked salmon, breadcrumbs, onion, egg, mayonnaise, lemon juice, Dijon mustard, garlic powder, and black pepper. Mix until well combined.
  2. Form the mixture into 8 equal-sized patties. Coat each patty lightly with additional breadcrumbs.
  3. Heat the vegetable oil in a large skillet over medium heat. Once hot, add the salmon croquettes and cook for about 4-5 minutes on each side, or until golden brown and crispy.
  4. Remove the croquettes from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve hot with your favorite sauce or a squeeze of lemon.
