- If using fresh salmon, preheat oven to 400°F (200°C). Place salmon on a baking sheet lined with parchment paper and bake for 12-15 minutes until cooked through. Let cool, then flake into small pieces. If using canned salmon, simply drain and flake.
- In a large bowl, combine the flaked salmon, breadcrumbs, egg, mayonnaise, dijon mustard, 1 tablespoon of lemon juice, dill, garlic powder, salt, and pepper. Mix until well combined.
- Form the mixture into 8 patties, about 1/2 inch thick. Place on a plate and refrigerate for at least 15 minutes to help them hold their shape.
- Heat olive oil in a large skillet over medium heat. Add the salmon patties and cook for 3-4 minutes on each side until golden brown and heated through.
- While the patties are cooking, prepare the sauce. In a small bowl, whisk together the sour cream, remaining 1 tablespoon of lemon juice, minced garlic, and lemon zest. Season with salt and pepper to taste.
- Serve the salmon patties hot, drizzled with the creamy lemon-garlic sauce. Enjoy!
