- In a bowl, combine the diced mango, red onion, jalapeño, cilantro, lime juice, and honey. Mix well and season with salt and pepper to taste. Set aside to let the flavors meld.
- Brush the salmon fillets with olive oil and season generously with salt and pepper. Place the salmon on the grill, skin side down, and cook for about 4-5 minutes per side, or until the internal temperature reaches 145°F (63°C). If using an oven, bake for 12-15 minutes.
- Once cooked, remove the salmon from the grill or oven and let it rest for a few minutes. Serve each fillet topped with a generous spoonful of the fresh mango salsa.
