Savory Barley Soup with Wild Mushrooms and Thyme

Ingredients
  

  • 1 cup Pearl barley Rinsed
  • 1 ounce Dried wild mushrooms Rehydrated in hot water
  • 2 tablespoons Olive oil
  • 1 large Onion Chopped
  • 2 cloves Garlic Minced
  • 2 carrots Carrots Sliced
  • 2 stalks Celery Sliced
  • 8 ounces Fresh mushrooms Sliced
  • 6 cups Vegetable broth
  • 2 teaspoons Fresh thyme Chopped
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 2 tablespoons Fresh parsley Chopped, for garnish

Method
 

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, sliced carrots, and celery to the pot. Cook for another 5 minutes, stirring occasionally.
  3. Stir in the sliced fresh mushrooms and rehydrated wild mushrooms (reserve the soaking liquid). Cook until the mushrooms release their moisture, about 10 minutes.
  4. Add the rinsed pearl barley to the pot, stirring to coat with the vegetables and mushrooms.
  5. Pour in the vegetable broth and the reserved mushroom soaking liquid, ensuring any sediment is left behind. Bring the soup to a boil.
  6. Reduce the heat to low, add the chopped thyme, salt, and black pepper. Simmer the soup, covered, for about 45 minutes, or until the barley is tender.
  7. Taste and adjust seasoning as needed. Serve hot, garnished with fresh parsley.
