- Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- In a large skillet over medium heat, cook the ground beef until browned, about 8-10 minutes. Drain excess fat.
- Add the chopped onion and minced garlic to the skillet, cooking until softened, about 5 minutes.
- Stir in the diced tomatoes with their juices, beef broth, paprika, thyme, salt, and pepper. Simmer for 5 minutes.
- Layer half of the chopped cabbage in the prepared baking dish. Spread the cooked rice evenly over the cabbage.
- Pour the beef mixture over the rice, then top with the remaining cabbage.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil, sprinkle with shredded cheddar cheese if using, and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
- Let the bake rest for 5 minutes before serving.
