Ingredients

  • 4 salmon fillets 6 oz each, skin on
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 2 tbsp sesame seeds white or black
  • 1 lb asparagus trimmed
  • 1 red bell pepper bell pepper sliced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Equipment

  • Baking sheet
  • Parchment paper or foil
  • Small bowl
  • Whisk
  • Pastry brush

Method

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
  2. In a small bowl, whisk together the soy sauce, honey, and rice vinegar to create a marinade. Brush this mixture over the salmon fillets, ensuring they are well coated.
  3. Sprinkle the sesame seeds evenly over the top of each salmon fillet, pressing gently to adhere.
  4. Arrange the asparagus and bell pepper slices on the baking sheet. Drizzle with olive oil, then season with salt and pepper. Toss to coat evenly.
  5. Place the salmon fillets on the sheet pan among the vegetables. Bake for 18-20 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.

Notes

Chef's Tips:
• For the best flavor, marinate the salmon for at least 10 minutes before baking.
• Avoid overcrowding the sheet pan to ensure even cooking.
• Serve with a squeeze of fresh lemon juice for added brightness.
Food Safety:
• Ensure salmon reaches an internal temperature of 145°F (63°C) for safety.
• Store leftovers in the refrigerator within two hours of cooking.
