- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a small bowl, whisk together the tahini, honey, lemon juice, minced garlic, cumin, paprika, salt, and black pepper to create the marinade.
- Place the salmon fillets on the prepared baking sheet. Brush the tahini mixture generously over the top of each fillet, reserving some for the chickpeas.
- In a separate bowl, toss the drained chickpeas with the remaining tahini mixture and olive oil. Spread the chickpeas evenly around the salmon on the baking sheet.
- Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- While the salmon and chickpeas are baking, prepare the couscous. Bring the vegetable broth to a boil in a small saucepan. Remove from heat, stir in the couscous, cover, and let sit for 5 minutes. Fluff with a fork before serving.
- Serve the salmon and chickpeas over the cooked couscous, garnished with fresh parsley.
