Shepherd's Pie Soup

A comforting twist on the classic Shepherd's Pie, this soup combines all the flavors of the traditional dish in a warm, hearty bowl. Perfect for chilly evenings or when you need a comforting meal.

Ingredients
  

  • 1 lb ground lamb or beef Lamb is traditional, but beef works well too
  • 1 tbsp olive oil
  • 1 large onion diced
  • 2 cloves garlic minced
  • 2 medium carrots diced
  • 1 cup frozen peas
  • 4 cups beef broth
  • 1 14.5 oz can diced tomatoes undrained
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 lbs potatoes peeled and cubed
  • 1/2 cup milk for mashed potatoes
  • 2 tbsp butter for mashed potatoes
  • 1/2 cup shredded cheddar cheese optional, for topping

Equipment

  • Large pot
  • Separate pot for boiling potatoes
  • Potato masher or mixer

Method
 

  1. In a large pot, heat olive oil over medium heat. Add the ground lamb or beef and cook until browned, breaking it up with a spoon as it cooks, about 5-7 minutes.
  2. Add the diced onion, minced garlic, and diced carrots to the pot. Cook until the vegetables begin to soften, about 5 minutes.
  3. Stir in the tomato paste, dried thyme, and dried rosemary, cooking for another minute to enhance the flavors.
  4. Pour in the beef broth and diced tomatoes with their juice. Bring the soup to a boil, then reduce the heat and simmer for 20 minutes.
  5. While the soup simmers, boil the potatoes in a separate pot until tender, about 15-20 minutes. Drain and mash with milk and butter until smooth.
  6. Add the frozen peas to the soup and cook for an additional 5 minutes.
  7. Season the soup with salt and pepper to taste. Ladle the soup into bowls and top each serving with a dollop of mashed potatoes. If desired, sprinkle shredded cheddar cheese on top.
