  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/8 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/4 cup chocolate chips optional, for extra richness

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 5x5 inch baking pan or line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together the melted butter and sugar until well combined. Add the egg and vanilla extract, mixing thoroughly.
  3. Sift in the flour, cocoa powder, baking powder, and salt. Stir until just combined, being careful not to overmix. Fold in the chocolate chips if using.
  4. Pour the batter into the prepared pan, spreading it evenly. Bake for 18-20 minutes, or until the edges start to pull away from the sides of the pan and a toothpick inserted in the center comes out with a few moist crumbs.
  5. Remove from the oven and let cool in the pan for at least 15 minutes before cutting into squares. Enjoy warm or at room temperature.
