Smoky Smoky Black Eyed Pea Soup

Ingredients
  

  • 2 tbsp olive oil
  • 1 large onion diced
  • 3 cloves garlic minced
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 1 14.5 oz can diced tomatoes with juices
  • 6 cups vegetable broth
  • 2 15 oz cans black eyed peas rinsed and drained
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 2 cups kale chopped, stems removed
  • 1 tbsp apple cider vinegar optional

Method
 

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion, and sauté until translucent, about 5 minutes. Add the minced garlic, and cook for another minute until fragrant.
  2. Stir in the diced carrots and celery, cooking for 5 minutes until they begin to soften. Add the canned diced tomatoes with their juices, and let simmer for a few minutes.
  3. Pour in the vegetable broth, and bring the mixture to a boil. Once boiling, reduce the heat to a simmer.
  4. Add the black eyed peas, smoked paprika, cumin, dried thyme, and bay leaf to the pot. Season with salt and pepper to taste. Let the soup simmer for about 30 minutes, allowing the flavors to meld together.
  5. In the last 5 minutes of cooking, add the chopped kale to the soup. Stir in the apple cider vinegar if using, and adjust seasoning as needed. Serve hot, garnished with fresh herbs if desired.
