Ingredients
  

  • 1 pound dried black eyed peas rinsed and sorted
  • 6 cups water
  • 1 tablespoon olive oil
  • 1 large onion diced
  • 2 cloves garlic minced
  • 1 large ham hock or 4 ounces bacon, chopped
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper optional, for heat

Method
 

  1. Soak the black eyed peas in water overnight, or use the quick soak method: boil the peas for 2 minutes, then let them sit for 1 hour before draining.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Add the ham hock or chopped bacon to the pot and cook until lightly browned. If using bacon, cook until crispy.
  4. Pour in the water, then add the drained black eyed peas, salt, black pepper, cayenne pepper (if using), and bay leaf. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 1 hour, or until the peas are tender. Stir occasionally and add more water if needed to keep the peas covered.
  6. Once the peas are tender, remove the ham hock (if using), shred the meat, and return it to the pot. Discard the bone and bay leaf. Adjust seasoning to taste and serve hot.

Notes

• For a vegetarian version, use vegetable broth instead of water and omit the ham hock or bacon
