Ingredients
  

  • 1 pound dried black eyed peas rinsed and sorted
  • 6 cups water or chicken broth
  • 1 ham hock or 4 slices of bacon
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper optional, for heat

Method
 

  1. Soak the black eyed peas overnight in water, or use the quick soak method by boiling them for 2 minutes, then letting them sit for an hour. Drain and rinse.
  2. In a large pot, add the soaked black eyed peas, water or broth, ham hock or bacon, chopped onion, minced garlic, salt, black pepper, cayenne pepper (if using), and bay leaf. Bring to a boil, then reduce to a simmer.
  3. Cover and cook for about 1.5 hours, or until the peas are tender. Stir occasionally and add more liquid if needed.
  4. Once the peas are cooked, remove the ham hock or bacon and shred the meat, discarding any bones or fat. Return the meat to the pot.
  5. Taste and adjust seasonings as needed. Serve hot, garnished with fresh herbs like parsley or green onions if desired.

Notes

Chef's Tips:
• For a vegetarian version, use vegetable broth and skip the ham hock, adding smoked paprika for flavor.
• Avoid overcooking the peas, as they can become mushy. Check them periodically.
