Ingredients
  

  • 1 pound enoki mushrooms trimmed and separated
  • 2 tablespoons soy sauce low-sodium preferred
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon gochujang Korean chili paste
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1 tablespoon sesame seeds toasted, for garnish

Method
 

  1. Heat sesame oil in a large skillet over medium-high heat until shimmering, about 2 minutes.
  2. Add minced garlic and grated ginger, sautéing until fragrant, approximately 1 minute.
  3. Add enoki mushrooms to the skillet, stirring to coat with the oil, garlic, and ginger. Cook for 2 minutes.
  4. In a small bowl, mix soy sauce, rice vinegar, and gochujang. Pour over the mushrooms, stirring to combine. Cook for an additional 2 minutes, allowing the sauce to thicken slightly.
  5. Remove from heat and transfer to a serving dish. Garnish with sliced green onions and toasted sesame seeds.

Notes

Chef's Tips:
• For a milder version, reduce the amount of gochujang or substitute with sriracha
• Avoid overcooking the mushrooms to maintain their delicate texture
• Serve as a side dish with rice or noodles for a complete meal
