Spicy Szechuan Noodles with Garlic Chili Oil

Ingredients
  

  • 8 oz dried noodles such as lo mein or udon
  • 3 tbsp vegetable oil
  • 2 tbsp Szechuan peppercorns crushed
  • 4 cloves garlic minced
  • 2 tbsp chili flakes adjust to taste
  • 1 tbsp soy sauce
  • 1 tbsp black vinegar or rice vinegar
  • 1 tsp sesame oil
  • 2 green onions green onions sliced
  • 1 cucumber julienned, for garnish
  • 1 tbsp sesame seeds for garnish

Equipment

  • Large pot for boiling noodles
  • Small saucepan for making garlic chili oil
  • Strainer for draining noodles and peppercorns
  • Large mixing bowl for tossing noodles

Method
 

  1. Cook the noodles according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
  2. In a small saucepan, heat the vegetable oil over medium heat. Add the crushed Szechuan peppercorns and cook for 1-2 minutes until fragrant. Strain out the peppercorns, reserving the oil.
  3. Return the oil to the saucepan and add the minced garlic and chili flakes. Cook for 1-2 minutes until the garlic is golden brown. Remove from heat and let cool slightly.
  4. In a large bowl, combine the cooked noodles, garlic chili oil, soy sauce, black vinegar, and sesame oil. Toss to coat the noodles evenly.
  5. Divide the noodles among serving bowls. Garnish with sliced green onions, julienned cucumber, and a sprinkle of sesame seeds. Serve immediately.

Notes

Chef's Tips:
• For a milder version, reduce the amount of chili flakes used in the garlic chili oil
• Avoid overcooking the garlic to prevent bitterness in the oil
• Serve with a side of steamed vegetables for a complete meal
