Ingredients
  

  • 12 large button mushrooms stems removed and reserved
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 small onion finely chopped
  • 10 ounces spinach fresh, chopped
  • 1/2 cup cream cheese softened
  • 1/4 cup Parmesan cheese grated
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons breadcrumbs optional, for topping

Method
 

  1. Preheat your oven to 375°F (190°C). Clean the mushrooms and remove the stems. Finely chop the stems and set aside.
  2. Heat the olive oil in a skillet over medium heat. Add the chopped mushroom stems, garlic, and onion, cooking until softened, about 5 minutes.
  3. Add the chopped spinach to the skillet and cook until wilted, another 3-4 minutes. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the spinach mixture with the cream cheese, Parmesan cheese, salt, and pepper. Stir until well mixed.
  5. Spoon the filling into the mushroom caps, mounding it slightly. If using, sprinkle breadcrumbs over the top of each mushroom.
  6. Place the stuffed mushrooms on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
