  • 1 pound shiitake mushrooms stems removed, caps sliced
  • 2 tablespoons soy sauce low-sodium preferred
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon ginger freshly grated
  • 2 green onions green onions sliced, for garnish
  • 1 tablespoon sesame seeds toasted, for garnish

Method
 

  1. In a small bowl, whisk together the soy sauce, honey, rice vinegar, and sesame oil until well combined. Set aside.
  2. Heat a large skillet over medium-high heat. Add the sesame oil, then the sliced shiitake mushrooms. Cook for about 5 minutes, stirring occasionally, until the mushrooms begin to brown and soften.
  3. Add the minced garlic and grated ginger to the skillet. Cook for another minute, stirring constantly to prevent burning.
  4. Pour the sauce mixture over the mushrooms. Stir well to coat the mushrooms evenly. Reduce the heat to medium and let the mushrooms simmer in the sauce for about 5-7 minutes, or until the sauce thickens and becomes sticky.
  5. Remove the skillet from the heat. Transfer the mushrooms to a serving dish and garnish with sliced green onions and toasted sesame seeds.
