Method
- Preheat your oven to 350°F (175°C). Sift the cake flour and 3/4 cup of granulated sugar together twice to ensure they are well combined and aerated.
- In a large mixing bowl, beat the egg whites until frothy. Add the cream of tartar, vanilla extract, and salt. Continue beating until soft peaks form. Gradually add the remaining 3/4 cup of granulated sugar, beating until stiff peaks form. Trust me, this step is crucial for that light, fluffy texture.
- Gently fold the sifted flour mixture into the egg whites in three additions, being careful not to deflate the egg whites. Tip from me: use a rubber spatula and fold gently to maintain the volume.
- Pour the batter into an ungreased 10-inch tube pan. Smooth the top and bake for 35-40 minutes, or until the cake is golden brown and springs back when lightly touched. Now comes the fun part - watching your cake rise to perfection!
- Invert the pan onto a bottle or cooling rack and let the cake cool completely in the pan. Once cooled, run a knife around the edges to loosen the cake and remove it from the pan. Whip the heavy cream with powdered sugar until stiff peaks form. Spread the whipped cream over the top of the cake and decorate with sliced strawberries. Step back and admire your beautiful creation before serving!
