- Preheat your oven to 350°F (175°C). In a bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined. Press this mixture into the bottom of each taco shell to form a crust. Bake the shells for about 10 minutes until the crust is golden brown. Let them cool completely.
- In a separate bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, continuing to beat until fully incorporated. Gently fold in the whipped heavy cream until the mixture is light and fluffy.
- Carefully fill each cooled taco shell with the cheesecake mixture, using a piping bag or spoon to ensure even distribution. Place the filled tacos in the refrigerator to set for at least 30 minutes.
- Once the cheesecake filling has set, top each taco with the chopped strawberries and a generous sprinkle of strawberry crunch topping. Serve immediately or keep refrigerated until ready to enjoy.
