- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes. Add the egg and vanilla extract, mixing until well combined.
- Sift together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined. Fold in the strawberry jam, ensuring it's evenly distributed throughout the dough.
- Gently fold in the crushed freeze-dried strawberries and white chocolate chips. The dough should be thick and slightly sticky.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each ball slightly with the back of a spoon.
