  • 2 cups crushed strawberries About 1 quart of fresh strawberries
  • 4 cups sugar Granulated
  • 1 pouch liquid pectin 3 oz. pouch
  • 2 tablespoons lemon juice Freshly squeezed

Equipment

  • Large mixing bowl
  • Potato masher or food processor
  • Measuring cups and spoons
  • Freezer-safe containers with lids

Method

  1. Wash and hull the strawberries. Crush them thoroughly using a potato masher or food processor until you have 2 cups of crushed berries.
  2. In a large bowl, combine the crushed strawberries with the sugar. Stir well and let the mixture sit for 10 minutes, stirring occasionally.
  3. After 10 minutes, stir in the lemon juice and liquid pectin. Continue stirring for 3 minutes to ensure the pectin is fully dissolved.
  4. Pour the jam into clean, freezer-safe containers, leaving about 1/2 inch of headspace at the top. Seal the containers tightly.
  5. Let the jam sit at room temperature for 24 hours to allow it to set. Then, store it in the freezer for up to 1 year. Thaw in the refrigerator before using.

Notes

Chef's Tips:
• For a smoother jam, blend the strawberries instead of crushing them
• Avoid over-stirring after adding pectin to prevent the jam from becoming runny
• Serve this jam on scones or use it as a topping for ice cream
Food Safety:
• Always use clean equipment and containers to prevent contamination
• Thaw jam in the refrigerator, not at room temperature, to maintain quality
