- In a blender, combine the strawberries, 1/4 cup of sugar, and lemon juice. Blend until smooth. Strain the mixture through a fine-mesh sieve to remove any seeds and set aside.
- In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to bloom. Then, heat the gelatin mixture in the microwave for about 15 seconds or until it's completely dissolved. Stir the gelatin into the strawberry puree until well combined.
- In a large mixing bowl, whip the heavy cream, remaining 1/4 cup of sugar, and vanilla extract until stiff peaks form. Gently fold the strawberry mixture into the whipped cream until no streaks remain.
- Divide the mousse among 6 serving glasses or bowls. Refrigerate for at least 2 hours, or until set.
