- In a blender, puree the strawberries with the sugar until smooth. Strain the mixture through a fine-mesh sieve to remove seeds, if desired. Set aside.
- Sprinkle the gelatin over the cold water in a small bowl and let it sit for 5 minutes to bloom. Then, microwave the gelatin mixture for about 15 seconds until it's fully dissolved. Stir the gelatin into the strawberry puree.
- In a separate bowl, whip the heavy cream with the vanilla extract until stiff peaks form. Gently fold the whipped cream into the strawberry mixture until well combined.
- Pour the mousse into a bowl, cover, and refrigerate for at least 2 hours or until set. Once set, it's ready to be used as a cake filling.
