Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup freeze-dried strawberries crushed
  • 1/4 cup fresh strawberries finely chopped

Method
 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.
  2. In a medium bowl, whisk together the flour, cornstarch, baking powder, and salt. Set aside.
  3. In a separate large bowl, cream the softened butter and sugar until light and fluffy, about 2-3 minutes. Add the egg and vanilla extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the crushed freeze-dried strawberries and chopped fresh strawberries.
  5. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are lightly golden.
  6. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
