  • 1/4 cup powdered sugar
  • 1 pound fresh strawberries sliced
  • 1 tablespoon granulated sugar for strawberries

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper. Trust me, this ensures your sponge cake releases easily.

  5. Gently fold the dry ingredients into the yolk mixture until just combined. Then, carefully fold in the beaten egg whites in three additions, ensuring you maintain the volume of the batter. Believe me, this step is crucial for a light and fluffy sponge.
  6. Divide the batter evenly between the prepared pans. Bake for 20-25 minutes, or until the cakes are golden and a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
