Ingredients
  

  • 1 pound ground beef 80/20 lean/fat ratio works well
  • 1 packet taco seasoning or homemade blend
  • 1 can black beans 15 oz, drained and rinsed
  • 1 can corn 15 oz, drained
  • 1 can diced tomatoes with green chilies 10 oz
  • 2 cups shredded cheddar cheese divided
  • 1 bag frozen tater tots 32 oz
  • 1/2 cup sour cream for serving
  • 1/4 cup sliced green onions for garnish

Method
 

  1. Preheat your oven to 375°F (190°C). In a large skillet over medium-high heat, cook the ground beef until browned, breaking it into small pieces as it cooks, about 7-8 minutes.
  2. Drain excess fat from the skillet, then add the taco seasoning and 1/2 cup of water. Stir well and simmer for 2-3 minutes until the mixture thickens.
  3. Stir in the black beans, corn, and diced tomatoes with green chilies. Cook for another 2-3 minutes until heated through.
  4. Transfer the beef mixture to a 9x13 inch baking dish. Sprinkle 1 cup of shredded cheddar cheese evenly over the top.
  5. Arrange the frozen tater tots in a single layer over the cheese. Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and crispy.
  6. Remove from the oven, sprinkle the remaining 1 cup of shredded cheddar cheese over the top, and return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  7. Let the casserole cool for 5 minutes before serving. Garnish with sour cream and sliced green onions.

Notes
