- Start by preparing your vegetables. Cut the cauliflower into florets, keeping the largest piece for the turkey's body. Slice the broccoli into small florets for the feathers. Thinly slice the bell peppers and cucumber.
- On a large platter, arrange the largest cauliflower piece in the center to form the turkey's body. Surround it with a ring of hummus or your chosen dip to secure the vegetables.
- Create the turkey's feathers by arranging the broccoli florets around the cauliflower body, followed by the colorful bell pepper slices. Alternate the colors for a vibrant look.
- Slice the cucumber into rounds and arrange them in a semi-circle at the base of the turkey to form a decorative border.
- For the turkey's face, cut a small triangle from the carrot for the beak and use two black olives for the eyes. Attach these to the cauliflower body using toothpicks or a dab of dip.
- Slice the remaining carrot into thin strips and arrange them at the bottom of the turkey to form the feet.
- Serve immediately or cover and refrigerate until ready to serve.
