  • 1 cup heavy cream or coconut milk for a lighter option

  • 2 tablespoons olive oil

Method
 

  1. Soak the black eyed peas overnight in water, covering them by at least 2 inches. Drain and rinse them before cooking.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Add the soaked black eyed peas to the pot along with the chicken broth, smoked paprika, cayenne pepper, and bay leaves. Bring to a boil, then reduce to a simmer and cook covered for about 45 minutes, or until the peas are tender.
  4. Once the peas are tender, stir in the heavy cream. Simmer uncovered for an additional 15 minutes to allow the flavors to meld and the sauce to thicken. Season with salt and black pepper to taste.
  5. Remove the bay leaves before serving. Serve hot, garnished with fresh herbs if desired.
