  • 2 cups onions finely chopped
  • 1 pound mushrooms sliced, preferably cremini or button
  • 2 teaspoons dried dill weed
  • 1 tablespoon paprika Hungarian sweet paprika preferred
  • 1 tablespoon soy sauce
  • 2 cups chicken or vegetable broth
  • 1 cup milk whole milk recommended
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice freshly squeezed
  • 1/4 cup sour cream for garnish
  • 2 tablespoons fresh dill chopped, for garnish

Method
 

  1. Melt the butter in a large pot over medium heat. Add the onions and cook until they are soft and translucent, about 5 minutes.
  2. Add the mushrooms, dried dill, and paprika. Cook, stirring occasionally, until the mushrooms release their moisture and start to brown, about 10 minutes.
  3. Stir in the soy sauce and chicken or vegetable broth. Bring the mixture to a simmer and let it cook for 10 minutes.
  4. In a separate bowl, whisk together the milk and flour until smooth. Slowly pour this mixture into the soup, stirring constantly to avoid lumps. Cook for another 5 minutes, or until the soup thickens.
  5. Season the soup with salt, pepper, and lemon juice. Adjust the seasoning to taste.
  6. Serve hot, garnished with a dollop of sour cream and a sprinkle of fresh dill.
