  • 1 lb Mushrooms sliced
  • 4 cups Vegetable broth low-sodium
  • 1 cup Water
  • 1 tsp Thyme dried
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Black pepper freshly ground
  • 1/2 cup Heavy cream optional, for creaminess
  • 2 tbsp Fresh parsley chopped, for garnish

Method
 

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes, until softened and translucent.

  3. Pour in the vegetable broth and water, then add the dried thyme, salt, and black pepper. Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.
  4. If using, stir in the heavy cream and let the soup simmer for an additional 5 minutes. Taste and adjust seasoning as needed.
  5. Serve hot, garnished with fresh parsley.
