Ingredients
  

  • 1 pound ground beef 85% lean recommended
  • 1/2 cup breadcrumbs Panko or regular
  • 1/4 cup milk Whole or 2%
  • 1 egg Beaten
  • 1/2 cup onion Finely chopped
  • 1 clove garlic Minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup ketchup For topping

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin with cooking spray or oil.
  2. In a large bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, thyme, oregano, salt, and black pepper. Mix until just combined, being careful not to overmix.
  3. Divide the meat mixture evenly among the muffin cups, pressing down gently to ensure they are packed well.
  4. Spread a teaspoon of ketchup on top of each muffin.
  5. Bake in the preheated oven for 25 minutes, or until the internal temperature reaches 160°F (71°C) and the muffins are no longer pink in the center.
  6. Allow the meatloaf muffins to cool in the pan for 5 minutes before transferring them to a serving platter.
