Ingredients
  

  • 4 chicken breast fillets pounded to even thickness
  • 1 cup fresh basil pesto homemade or store-bought
  • 8 slices of sourdough bread
  • 8 slices of mozzarella cheese
  • 2 tomatoes sliced
  • 2 tbsp olive oil for cooking
  • 1 tsp salt
  • 1/2 tsp black pepper

  • Skillet or griddle
  • Meat mallet or rolling pin
  • Spatula

Method
 

  1. Preheat your skillet or griddle over medium heat. Season the chicken breasts with salt and pepper.
  2. Add olive oil to the skillet and cook the chicken for about 5-6 minutes on each side until fully cooked (internal temperature of 165°F/74°C).
  3. While the chicken cooks, spread a generous amount of pesto on one side of each slice of sourdough bread.
  4. Once the chicken is cooked, let it rest for a few minutes, then slice it into thin strips.
  5. Assemble the sandwiches by placing a slice of mozzarella on the pesto side of four bread slices, followed by the sliced chicken and tomato slices. Top with another slice of mozzarella and the remaining bread, pesto side down.
  6. Place the sandwiches in the skillet or on the griddle and cook for about 2-3 minutes on each side until the bread is toasted and the cheese is melted.
