- Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the Italian sausage, breaking it up with a spoon. Cook for 5-7 minutes until browned and cooked through. Use a slotted spoon to transfer the sausage to a plate, leaving the rendered fat in the pot.
- Add the diced onion to the pot and cook in the sausage fat for 4-5 minutes until softened. Add the minced garlic and tomato paste, stirring constantly for 1 minute until fragrant. This step, called 'blooming' the paste, deepens the tomato flavor significantly.
- Pour in the crushed tomatoes and chicken broth. Add the dried oregano, basil, red pepper flakes (if using), and the cooked sausage back to the pot. Bring to a simmer, then reduce heat to medium-low. Let it simmer gently for 15 minutes to allow the flavors to meld. Season with salt and pepper to taste.
- Increase heat to medium and stir in the cheese tortellini. Cook according to package directions, usually 5-7 minutes for fresh or 7-9 for frozen, until al dente. In the last minute of cooking, stir in the fresh spinach until just wilted.
- While the tortellini cooks, prepare the cheesy topping. In a small bowl, mix the ricotta cheese with a pinch of salt and pepper. Turn off the heat under the soup. Ladle the hot soup into bowls. Top each serving with a generous dollop of the seasoned ricotta, a sprinkle of shredded mozzarella, and fresh basil. The residual heat will melt the cheeses perfectly.
